Fender rubbing

Fender rubbing
I am running 275/35-19's on19x10.0 +19 wheels. The car is dropped with Tien S-tech's for about a 1" drop. My alignment on the front is -.2 off but the rear is within spec.
While doing a run up the Blueridge Parkway I experienced some rear wheel rubbing. I had 1 passenger and about 100 lbs more gear with clothes and a cooler. Even without the 100 lbs I still expect that I would have rubbed some. Doing track days with tire rubbing is out of the question and I have to be able to carry an instructor if I expect to be able to race one day.
What is the solution here.
1. Roll the rear fenders? (I am going to try this first)
2. New shocks?
3. Stiffer rear springs?
4. Scrap it all and get some coil-overs (which might still do the same thing)
5. Some combination of the above?
