It is explained in the video comments of what is happening, or at least the theory behind it.

The squid's head is actually chopped off already. And by "head" I mean the really long portion of the squid's body where all the vital organs are (heart, brain, etc.)

However, the squid's nervous system is still intact even if the squid is dead. The sodium from the soysauce "jump starts" the nerves, causing the squid to move like that.
