Double clutching is useful in certain circumstances like getting into 1st when rolling or just taking some load off the synchros when doing a higher RPM downshift.
To do it, clutch out, shifter in neutral, rev to the RPM you'd be at for the next gear, then clutch in and put the shifter in said gear, let out clutch. You should feel almost no resistance moving the shifter into the gear due to the synchros effectively doing nothing.
For the average downshift it's not needed, but not a bad skill to have. It's easier than heel and toeing correctly.

With the advent of modern day synchros double clutching is useless......it was a technique used a long time ago mainly bycommercial drivers because the oversize manual trannies of the day had no synchros- they had to manually match gear speed to engine speed.
