I did a search and couldn't find anything. Is there a DYI for changing the thermostat somewhere? Can we use a generic or just the Nissan? Easy to do on our cars?
I think my 'stat is getting lazy and I guess it's time for a change.

Why do you think your T-stat is lazy? Have you recently changed the coolant? Usually a stat doesn't get lazy. It either works or it doesn't. It's a super simple device. I suggest removing it and testing it via the FSM procedure before throwing down the cash for one. If you want to lower coolant temps, an change is just to add the radiator cap from a 300ZXTT.
Faulty thinking on my part? Any other suggestions?

Also, I haven't had the chance (also too lazy right now) to look under the engine cover. Where is the 'stat located in our cars and how easy is it to get at? Will a generic type fit, or is it one of those that is integrated into a housing of some sort?

It's quite possible the issue you're having is related to a vacuum or weak vacuum solenoid. Under the dash (passenger side) is box with a door what opens and closes between the heater core or AC evap based on if you want hot or cold air. This door is often vacuum actuated with vacuum solenoid. At idle, vacuum is high and depending on throttle input, vacuum will rise and fall. If there is a leak or actuator problem, the door's operation will be inconsistent and may vary with speed. This exact problem you're describing is quite common with cars, especially Jeep GCs. I'm unsure if the G uses vacuum or an electronic motor to operate the blower door. I believe the door is accessible once you remove the lower passenger dash (do a search for cabin filter replacement). It is possible something might be blocking the door, not letting the unit distribute heat correctly at idle.
Nissan thermostat are of a design that fails open or always leaks a little [rubber surround]. Common for long warm ups, low heat temp to be a leaky thermostat.

I thought I saw some separate thermostats that would fit, but I guess you'd have to disassemble the unit to make it work. Not worth the trouble if so.
