need help! car is overcooling without thermostat, overheating with t stat

Hey drivers, ive got a head scratcher for you all.
A while back i purchased a salvaged 03 coupe and when winter hit it started running cold, so i took out the thermostat just to find that there wasnt one, it was just the housing, so i put a thermostat in and it started to overheat, so i did some searching and found that air bubbles are a big problem so i spent a month trying to bleed the air out and couldnt, i tried everything includin buying a spill free funnel and drilling a small hole in the thermostat. (I also replaced the water pump bc some of them were plastic) Nothing worked, i took it to a mechanic who tested for pressure and exhaust gasses in the coolant and there were no problems there. The heater works intermittently and i cant find a correlation between the heater and anything else like the revs or the angle of the car or anything.
So far my buest guess is that there is still an air bubble in it but im interested ti hear what you have to say. If u need any info dont hesitate to ask.
Also i have an obd adapter so i can read the sensors using my phone so im sure its not the temperature sending unit.
I could really use some help here guys!

Also, if anyone has the wiring diagram for the 03 coupes stereo (no navi just bose) i would be eternally grateful! I dunno why but i absolutely cannot find it and half my speakers dont work!

Ok i believe it is air in the system as well. I get a good floor jack when i burp my cooling system and jack the front of the car 12-18 inches. Start the car and let it get hot with your spill feee funnel in place, once your fans come on crack the bleed port until fluid comes out. Once that is done get in the car and rev the car to 2k rpms and hold it for 10 seconds then let it idle anc check your fluid, get back in and rev to 3k this time nd count to 10, get out check your fluid and let it idle again for about a minute. Shut the car off and crack your bleed port again until fluid comes out, close the bleed port and let the car cool down but leave the front jacked up, make sure you watch your funnel beceause it is going to take a good amount of water. After the car has cooled repeat this whole process 1 more time and you should be good to go. MAKE SURE YOUR HEATER IS ON FULL BLAST while the car is running . The higher you get the front the better you will be but i would atleast go a 12 in

Thanks i tried doing it on flat ground and it wouldnt burb, so i tried to put it on ramps and that didnt work so i just jacked the front of the car up as far as i could lol
