I would be down for a saturday or sunday between March 18-26 ( i have those days off)

I would prefer option #2.

I'm not familiar with the type of food catering companies you have on that side of Florida or that venue's rules about having food cooked on premise by a mobile BBQ company but would getting the food catered be an option? ( this would require strict monitoring of attendees)

Option # 2 is good. Really like to zero in on date cause I want to take an extra day off if it's gonna be on a Sunday.

March 18th (Sunday)
March 24th (Saturday)
March 25th (Sunday)

 

I'm fine with whatever date. The 18th is day after St Pattys? Ouch. But whenever. Weekends get full fast must plan ahead.
