HP vs. Lbs/ft flywheel (torque?)

So I was looking at the chart below on Stillen's website [regarding how much power each stage of the Stillen SC adds to each of the two 2005 G35C engines] and was wondering why there's such a large gap between the torque and hp of the two engines [with SC installed] when their normal hp [without a SC installed] is quite small.

For example, the engine in the 2005 6MT has 298 hp which is 6.4% higher than the 280 hp the 5AT coupe from the same year has. But with a Stage 3 Stillen SC installed, the 6MT engine produces 12.1% more torque than the engine on the 5AT....almost twice the ratio of their horsepower difference. A couple of questions:

-Why is there a greater difference between the engines' torque than their horsepower? Is the 6MT engine designed better in some other way (i.e. it produces its peak torque at a higher RPM)?

-Is the torque difference (which is a bigger difference than the horsepower difference) more indicative of the car's performance, particularly acceleration (assuming you negate the gearing/transmission) than the hp difference?

Thanks in advance.

Stillen SC........No!!!!!!!!!!!!!!!!!!!!!...stupid numbers! Stillen stage 3-4 would get you 310-340whp realistically hahaha.
