Chances are, you'll be slower with 19s. Let's say the rims weigh the same. But no one has mentioned the weight of the tires. Most 19 in tires will weight more than 18 in tires, as more material is needed in the sidewalls. And the tires are the farthest from the center, so their weight plays a larger factor.
Plus, when most people get 19s, they get 9.5 or 10 in wide wheels. Then they add 275 series tires. Those aren't light.
OEM forged 19s are slightly lighter than the cast OEM 18s. But that's comparing apples and oranges. If you get forged 18s, they will be lighter in most cases. My 18s are 18 lbs.

I guess i could go 19s and keep by 17s and put slicks on them for when i go to the track.

Well, originally no one really knew what he was asking.
If you're saying which is best based on looks, then that's subjective, so it's up to you. Some people would argue to pick 20s instead of 19s.
But if you're talking purely about weight differences, then once you take the tires, the location of the weight, and other factors into account, in MOST cases, 18 in tire/wheel combo will be lighter than 19s. Obviously keeping the overall diameter the same.
The flip side is that I can't say that 18s are better than 17s, if you're just looking at weights. The last time I held a 15" Volk rim, it was amazingly light. But obviously no one is looking for 15s here.
Here's some wheel and tire weights that I've seen posted before, along with specs from tirerack.com. Everything is approximate.
G35 18" Front 25 lbs
Michelin PS 225/45/18 24 lbs
Total 49 lbs
G35 18" Rear 25 lbs (it's the same rim)
Michelin PS 245/45/18 26 lbs
Total 51 lbs
G35 Forged 19" Front 22 lbs
Bridgestone RE050A 225/40/19 27 lbs
Total 49 lbs
