Broken in!
I finally got her broken in last Sunday.
I did 1,300 miles in 23 days. Some at highway speeds. Some at city speeds. Most on the back country roads of the NC Piedmont around Raleigh.
I "Grannyed" her all the way to 1,200 miles. I hit 1,200 miles in Kinston, NC on a 200+ mile round trip. And can you believe it, with all of the G35Cs that Infiniti of Raleigh is selling (they claim they were #1 Infiniti dealership in sales/service in Oct 2002 and #5 for the year), the first G35 I see is a white sedan down east in Kinston.
Anyway. I stopped driving in "granny" mode at 1,200. And it does seem to be true that the G35 5AT does "learn" your driving style. I say this because now that I'm using a heavier foot, the shifts seem to be less crisp than I'd expect when accelerating quickly.
Anyway, I disconnected the battery for a couple of hours (the Infiniti service manager said 10 minutes as I expected) so hopefully the ECU, PCM, (what does Infiniti call it officially?) has forgotten the "granny" driving style.

Let us know if that 10 minutes did it. Everyone else here has been disconnecting the battery for 12 hours.

Yea, verily, tis true!
Disconnecting the battery did cause the ECU to forget the "granny" mode of "shifting" during the "break in" period.
In ManuMatic mode, the tranny now initiates a shift almost as soon as I toogle the stick. (However, IMO, it could be quicker in the low/mid rpm range though.)
The shift itself completes quicker in the low/mid rpm range. (However, IMO, it could be quicker/firmer still.)
The low/mid range shifts are more like the dealer's demo when shifting up in the >4500 rpm range. I.E. The shifts are not as sluggish as they were before disconnecting the battery.
YMMV. One has to realize that this is entirely subjective. There's no proof other than my "seat of the pants" observations.

Remember not to go hard on her until you have that first oil change. In general, the oil that is shipped in the engine is more suited for long term storage vs driving use. Also in running the car for the first 1200 mi, the working parts of the engine settle and seat themselve for normal operation. So your oil can contain debris and should be changed out after break in. This is not to be an alarm, but it is advisable and is common practice amongst other high end sports cars (BMW M, MB AMG, Audi S, etc).

True, I plane to change the oil first at 500 miles.

I can't make a comparison. I went from "Granny" mode to resetting the ECU to heavy throttle. I didn't really spend much time between "Granny" driving style and resetting the ECU so I don't know what the throttle response would have been like before the reset. Sorry.

Got an appointment for an oil change on Monday @10:00am. I'm also going to have them to pour in an MOA(?) additive the dealer said they use.
Don't know what MOA(?) is but as long as it doesn't hurt, it doesn't matter. Went through the same thing when Slick50 first came out. Don't hurt, Don't matter. Heck, I don't know, maybe this stuff actually helps. Saw an "infomercial" about something called "LinkTight"(?) made me want to run right out and buy their oil, gas and tranny additives. Didn't though cause it was that "Oxysomething" pitchman. I don't trust anyone who talks that loud and fast. Makes me think of a classic "Snake Oil" salesman portrayed in old Westerns. At least he doesn't use "shills" in his "'mercials".
