Cool Engine management?

I have an 04 g35 coupe. Upgraded plenum, flywheel, clutch , hks exhaust, aem intake, straight pipes, headers, throttle body spacer. I have never messed with the cars ecu or had it tuned and need to know of a reliable company to tune it for me. I heard of Cobb but they say you can only use the stock intake unless you download the avaliable software which i wont even touch because I'm not too familiar with all that. Any suggestions so I can get the most out of my G so far?....thx
