To be safe, most OG car guys will tell you to use both. I know the Ebrake is usually enough - but not always. The parking brake line sometimes loses tension and may need to be readjusted from time to time. I learned this the hard way with my Protege5 when it nearly rolled into my friend's car at a small car meet 3-4 years ago.
As a safety tip, when you're installing the remote start on a manual transmission add several mercury kill switches (horizontally, laterally, etc) to shut it down if it jerks from starting in gear. Won't be able to start on a hill, but it'll never get more than a foot or two away from you.
Learned that lesson the hard way on an old Jeep Wrangler, mercury switches acting as cut offs work wonders.
