Is it possible to replace the g35 with sunroof with the old roof panel that has no sunroof ? I have seen a roof panel parts from:

It's basic body work, yes it will require welding, grinding, sanding, filler, paint. It's definitely not a simple bolt-in component.

You would also need to replace the entire headliner with one from a non-sunroof model.

My question is why would you ever want to delete a sunroof?

If you're talking about just replacing the glass or track, well that's fairly straightforward stuff.
