I'm pretty positive a dealership will cash a deposit check. It seems pretty stupid for them not to considering it's basically cash for them. The ordering process can take 3 months, why would they risk the check bouncing 3 months down the road while they can cash it and earn interest now?
Dealer charged $1000 deposit straight from my debit card and it came out ten minutes later, isnt that some sh**. But it does come off the balance of the price negotiated. My dumb a** forgot I put the deposit down then over payed a thousand when I wrote the check for 39K when I took delivery of it, lol. I got credited back 1000 though later.

They wanted $1K from me at first. After running my credit, they decided that I could take it home (it was a Sunday) on a "temporary contract", with the understanding that I'd work out the rest once the banks opened on Monday. So I never actually gave them a deposit.
