As I've recommended in the past when people have talked about painting interior plastic bits:
You can get a glossy, shell-like appearance with exterior automotive paints OR you can go for pigmented-plastic, OEM look. Just decide which you want.
If it's the second, then go to a paint store (specialty automotive paint store would be good, but others might have this as well). They sell paint this designed for painting interior plastic in cars. The pigment/paint (which you have color-matched using an interior trim piece) is pretty thin. You can have the store fill aerosol cans for you or you can (as I suggest) use a $15 Modeler's Airbrush kit from Wal-Mart, etc. (powered by a can of propellant), thin the paint slightly and spray for a definate OEM look. For an entire interior, you're likely looking at removing all of the interior pieces to be painted, so a real paint-gun would make things go faster.
This stuff soaks into the plastic right away and, once dry, will simply leave you with different color interior plastic. No chipping or flaking or amateur look because it soaks in for an OEM look, retaining any OEM texture or grain in the plastic. It's usually color-matched by a computer, using an actual trim piece for a definate match, so there's no concern over matching existing bits, if that's your need. As far as changing color completely, you can find trim from another vehicle to use to match the paint to or you could just pick a color sample from anything and have the paint matched to that.

When you say dash, do you mean the trim pieces or the "dash". For the plastic trim pieces around the radio, it can be painted and clear coated. For the complete dash, it can be professionally rewrapped and made to look stock. I've seen an Accord dash rewrapped in white and it looks awesome. The only problem is finding a good shop to do the work at a reasonable price. As for repainting the dash, I don't really know how good it will look since our dash has this leather texture and painting might not stick well.

Having the items wrapped in leather or something might be slick too, if you can afford it. I'd love to wrap all the interior plastic with leather to get a nice, cacoon effect...

G35Xlover did it a while back. I would like the leather door panels. he didnt do the dash, but could probably give you an estimate of the cost or who to talk to.
