OMG seriously, if you're looking at the tachometer to tell you when to shift, you need to be driving an automatic.
And of course the 05 looks better than the 04 interior-wise. Fewer parts, more well thought out design. Only thing I'm not crazy about is the polished flat-beveled edge around the console/stereo's metalwork. Wish they'd just made the panels with a turned-under edge.

Not gonna argue over cosmetics, but the specifics of your post are a bit off. With the 6800 RPM redline in place, and 03/04 G gets to 61 MPH... we hit 60. With my redline, I hit 93 in third when needed. Never really eyed second, Id imagine 65 in second is possible. As for brembo's vs... Yes its a track thing. I track the car, so, I would personally have no use for the replacement brakes on the 05. And +1 for the tach being on the correct side. The reason they're on the left now is Cost efficiency. Look at the 03/04 Skyline 350GT. Tach's on the left. The 03/04 G35. Tachs on the right. 05 skyline... tach on the left. 05 G... tach on the left. They found yet another way to cut costs yet charge more for the car. Oh and I aint ognna argue about the 19's they are sexy. They do need a nice lip on the back though then I'd really love em.
