Overheating, smoke and thermostat gone wild

Last night while driving my 2003 INFINITI G35 SEDAN I noticed that there was a white-blueish smoke coming from my passenger side headlight, and after pulling over and popping my hood I smelled what seemed like coolant. I checked the coolant level of my car, and it was at the correct amount. Also when I left the car overnight and started it the next morning cold, it took a long time to get warm and then it would fluctuate quickly between Cold and Hot. Any Ideas as to what the problem is. I figured it could be something simple like something wrong with the thermostat, or maybe something severe like the coolant is leaking near the headgasket. Any ideas?

Blue smoke is usually burning oil.

Air pocket in the cooling system? Worth a flush, new coolant, and a new thermostat if you ask me.
