I'd help ya out but I'm on the west coast.
It's really easy to do.
All you need is a screwdriver, 10mm socket wrench, pliers and 15 minutes.

^ A Z-tube install should be very simple - although I didn't do my own.

Probably better if you posted up in your regional subforums than this one for local help. If you're near Rhode Island I bet Naughty240 could help you. And then some from what I hear

Find a different mechanic ASAP!, if he cant unscrew 3 bolts,(7 with the cover on),(4 on cover) + (2) 10mm and (1) flat head, and then get some pliers to undo the vacuum hose. Then why is he a mechanic?

The Z tube is the stock setup. The difference between the G and Z intake tube is the G has baffles and chambers built along it to silence incoming air. The Z tube is just a straight tube. It has a slightly more aggressive growl when under throttle due to not having the baffles. stock tube period showed best results as compared to most aftermarket intake tube setups from all I've read.

so to change to a Z tube on my 03 G35 is just go take the intake tube off of a 03 350z and bolt it on my G35?

If you can change a wheel you can install a Z-tube. Hell it would take longer to jack up the car and remove the lug nuts than it does to replace the intake tube.

I'm in Boston, but my schedule is probably tighter than yours.

But seriously, it's rediculously easy. Just two band clamps really.
