Do any of your guys have experience with cutting the bump stops on your suspension? I met a guy recently who did it on his G35 coupe and he said it didn't affect his ride quality at all, and his car was slammed. I know it increases the likelihood of you blowing your struts, but have any of you done this SAFELY?
Well, it's not going to affect ride quality, but if you are banging your car off the bump stops all the time, you are either way too low, or your shocks are valves incorrectly.
You can trim them, but like said, you run the risk of blowing shocks/struts and any damage incurred by slamming your suspension into the body of the car.

You can technically use the car without rear bump stops. There might be a lot of noise and banging, but I'm sure thousands of people are driving their cars daily with cracked front bump stops. What makes the rears any different?
A bunch of us have cut the bump stops and I have yet to hear even one bad story.
I would leave at least 1/4"-3/8" of rubber...once you look at the bump stop you'll see plastic? at the bottom and you don't want to cut into that. Make one even cut because it's difficult to get the saw started on a second cut.
