In the V8 world, changing out the ring gears is equivalent of a Plenum Spacer for G35 guys. It's pretty much the #1 or 2 mod you do....and makes a huge SOTP difference.
Probably the one mod that i'm surprised isn't done as much as I thought it would be. Cost is probably a reason.

For the G8GT, it's easier to swap in an entire pumpkin from a Camaro 3.27 or 3.5 vs the stock 2.92. As ring/pinion swaps require shimming everything back into tolerance.
A G37 is noticeably faster than the G35, stock for stock. Power-to-weight ratio is just part of the puzzle. You also need to look at the transmission and final drive gearing, where the power bands of the engines are and how they are tuned........etc. I'm sure Jairen on here would love to share his experience comparing a G37 7AT to his 05 6MT while at the tracks.
Off showroom floor, my G37 was quicker than my modded G35. Also interior was 5000 times nicer.
Both the 35 and 37 are pretty much maxed out as it is. Hate to say it but the G35/37 platform is one expensive car to modify in terms of bang for your buck. If you want significant gains, you'll need to look into FI.

you need to go with a newer block for better results and then the mods will be far fewer outside of FI.
The vq35hr in the 2007-2008 sedan is my favorite. they have early variable exhaust, revised heads and intake based on some of the nismo mods. OEM they make 88hp\litre, and with tuning is denser than the vq37hr and the car is lighter for those specific years. not much you can do other than open the exhaust and tune it but you will not get much for the cost.
be it my opinion, I would get a well taken care of 2007-2008 sedan and tune it and apply light mods only. your other option would be in my opinion would be FI the current engine *after* a full rebuild (for the rings and oil channels) but that's as much as the newer car. minus the variable exhaust the tuner will have a much easier time with a FI old school vq35de or hr.
or as noted below go with a g37 with a vq37hr

Thanks for all the good info... I do plan on going FI but not with an AT sedan; still going to keep the sedan though.
TBH these cars aren't that expensive to me, I came from the Ford SHO (2nd Gen) world where parts are rare and very expensive. And I know there are cars that are much easier and less expensive to mod/FI but wheres the challenge in that?
I think the G37 Coupe is the best option... Is the 6 speed available in the later models 2012-2013?

Even my Jeep came with a 3:73, but quickly put 4.10 in instead.
Heffschaft is right. My stock G37 was noticeably quicker than my modded G35. Plus the G37 responds MUCH better to modding. Same dyno, my full bolt and tuned 04 G35 made 261hp /241 tq. My 08 G37S bone stock made 278hp/242tq. My G37 with bolt ons and tune made 321hp/265 tq. A G37 with FI at 10psi can easily make 520hp. It is very difficult/unsafe to go over 500hp in a G35 stock motor. Most boosted G35s are in the 400-450hp range.

From full bolt on G35 to bone stock G37, it is pretty negligable. It felt faster but most likely due to gearing. Stock to stock is night and day difference.
I had 4.56's in a Cobra. You had to be a quick shifter but you could get rubber in all 5 gears.
