05 g35x why does the red oil light come on in manual mode only when i down shift?

Have you checked your oil level?

The act of downshifting may cause the car to decelerate in a manner than the oil sloshes to the front of the pan and the sensor is exposed.

So check your oil level. Oil consumption is an issue for these engines at higher miles no matter 5AT or 6MT.
