19s = good
I've head the coupe 19s since March and I think they are the best wheels you can buy for the money. They are very light and I would say they are lighter than my stock 6 spoke 17s. Strength is very good and I've had no problems with minor road cracks and railroad tracks going around 25-30 mph. I've also done a track day with them and they worked great with excellent turn in using the stock tires. As for the sizing, I think the front and rears are the same width but different offsets. If you want, after the first set of tires, you can get the same tire width for all 4 tires however, the rears will still be a little further out from the body because of the offset. With only 8 inches I don't know if you could squeeze in anything wider than a 255 but you could ask tire shops and see. In any case, you will never be able to rotate your tires unless you get non unidirectional tires in which case you could swap left to right.
I've had no rubbing issues of any sort though with a fully loaded or overloaded car it could possibly rub on the rear. The camber may cause the top of the tires to tilt inwards enough to clear it though. Its pretty certain that standard ride height with standard loads will not cause any rubbing. That said, I know people using 18 coupe wheels don't have problems with lowered suspensions and the 18s have the same offsets as the 19s.
If you're after a chrome finish, I've seen people selling chrome version on Ebay or perhaps your dealer could do it for you.

Rims with stock tires: $1400 from a G35Driver member
Performance: better cornering, but a little less stable thru bumpy tight curves
Ride comfort: feel every bump, but the wife can't tell the difference.
Appearance: priceless

I sould probably move the pics to the G35 sedans gallery if I can figure out how to do it. ???
