Grinding Noise - Rear Wheels
I know that on some Subaru's, rust builds up between the inner portion of the rotor hub and the brake backing plate. The issue only shows itself on tight slow speed turns and it has a metallic roaring sound and is often mistaken for worn bearings. Lots of people have wasted hundreds of dollars on bearing replacements only to find out the fix was simple after a couple of minutes of air grinding. My wife's 98 LGT wagon currently has the problem. The issue you're having may be similar.
I'd suggest taking the caliper and rotor off and closing inspecting everything of wear, etching/rubbing, etc. It sounds like the issue comes into play when the rotors get warmed up and causes some sort of clearance problem. Pay close attention to the internal e-brake system as well. That might be the cause of the problem.

count me in as one of the suckers paying several hundred to have the rear wheel bearings replaced..

what is air grinding?
oh and an update, so the mechanics had told me my rear wheel bearings were shot and had scratched into my rotors. so hopefully they were really messed up and i didnt just waste a bunch of money on wheel bearings that werent needed
