Bluetooth and phonebook on my phone?

It should work, Rohardi. The phone book is learned into the car's hard drive system and you get 200 numbers. So yes, the Curve will upload your numbers and then you can access them thru the car's phonebook. The car does not use the phonebook in your phone unless it is for caller ID. Ironically, the Curve will show caller ID on the car screen (as will my old Razr), but the iPhone will not.

so if I upload everything, and I use the Iphone and get a call from a number not stored in the car's memory will I get the phone number of the incomming call on the display?

Yes you will get the number on your display. You also get the number of antenna bars on your display at all times. I did some experimentation with my old Razr today and found that each phone uploads its own phone book. So if you upload numbers from the Razr, then the numbers stay with the Razr and do not transfer over to your iPhone when it is synched with the car.

My suggestion is to upload your stuff manually. It's a pain, but the car only takes 200 numbers. When I narrowed down all of the numbers I really wanted in my car, it only came to about 10. You can also put voice tags on the phone numbers in your phone book that you can access thru the voice activation in the car.
