Type S differences
I know we're debating this guy's two choices and all, but please don't forget the one option the S has that the non-S doesn't....manual transmission.
That was the deciding factor for me getting my car or a G in general.

G35s
I picked up my 07 G35S in late July it is blast to drive. Unfortunately I did not drive the Journey to compare the ride comfort differences, but evey review I read mentioned the G35S was a stiffer ride.
The seats are comfy and the bolsters are sweet, especially since they are adjustable. Another thing about the G35S seats are they come with the leg lombar support. Some people don't like it, but extra support on your legs for longer drives are nice. And if you don't like it you can set it back to standard.

Seats? Well, not everyone likes the sport seats... so those really don't count. lol
Even without them, you'd still have a hard time with a 4k budget:
Akebono BBK: cheapest option, 1500 w/o shipping or installation
Hotchkis sways: 350
Paddles: no idea, couple hundred at most?
Suspension: cheapest c/o are the Tanabes at about 850
Wheels: at least 1500 with tires, and that's cheap *** wheels, or about 1k for coupe 19's with tires.
LSD: I've only seen 1 aftermarket option available, and I would assume if it's anything of decent quality that it'd be close to 2k, w/o installation.
Even if you cheap-assed out and just did springs instead of c/o's and/or bought used "S" brakes or used "S" springs/sways, you're still close to/way over the 4k budget and you still got the base seats.
IMO, the deal breaker is the LSD and wheels, as those eat up the majority of the budget. Besides, the OP should be able to find another S at less than the 4K difference (2-2.5K should be the going rate used), and then there'd be no way you could accomplish installing the different parts at that price.
Whether you like them or not, they're part of the "S" package

what if someone bought the "S" and did all that.. then that defeats the purpose of the "S" right.
I just got a 2010 G37 as a loaner and this thing has a very soft ride compared to my 07 G35 Journey. My Journey has stiffer ride than this thing...I do have sport package rims but I definitely can feel the difference in suspension too. They might of softened up the suspension on later models to differentiate between sport and journey versions but this thing is so flimsy. Definitely has good power compared to mine but somehow some materials seem cheaper on the newer models. Oh, steering is way lighter than mine too. My steering is way heavier...and I know mine's a journey model with premium, sport rims and nav but not S.
