I have tried but I still couldn't work with the stock Sports pedals to get a good toe heel position for rev matching. I can kinda do side step but I would have to brake with the arch of my foot which I don't like.
So I am thinking that I might need to install aftermarket pedals to get more "coverage".
Anybody did this? What are my options? I prefer not to have to drill into the stock pedals ...

I totally concur that the stock sport pedals are poorly configured for any serious heel toe work. I haven't done anything about it though.
