When I was comparing this set to the GG one, I noticed that the GG uses a much thicker wire, 4ga, compared to the 8ga used by the SxExCx ones. What is the main reason for this difference? Is it just price cutting?

they have been determined that there are not performance differences from either size I believe. the 8 gauge is probably more flexible to allow you to work with it eaiser. I will let sean provide the correct response. thats my opinion since I have had Gordgee's kit before

For comparison sake, look at the power wire and the remote wire on any car amplifier. You will notice that the remote wire is always a fraction of the size of the power wire. The dfference is power/signal.
If you look at the size of your factory grounding wires in your engine bay, you will see that they are no thicker than string. Making a grounding kit to match that soze wouldnt make sense because it would be too fragile. I'm sure most of you appreciate the look of the grounding kit too.
Summary:
-8ga is good enough
-8ga is easier to work with
-8ga (IMO) looks better because it is not too bulky

IMO, the GG kit was the best one on the market for sure but I didnt like the way it looked. I tailored mine to have a more show-friendly look.
That was my inclination towards the reason why you chose 8gauge but i wanted to confirm it with you.

I do believe the extra wire for the AT's is a lead running to the tranny as AT's have electrical components that MT's do not. Right?
