The flange is the same on all DE test pipes/cats, yes you can reuse that gasket. It can be a bit tricky getting those nuts off if you haven't already, two face down the exhaust system and are easy to remove, one points back up into the engine bay and you will need about 3ft worth of extensions and a swivel to reach them from the front of the car in the engine bay. The right/passenger side one is easier to reach, the left/driver side one you have to remove the intake tube and it will barely fit with the extension wedged up against the steering shaft.
STRONGLY recommend only using 6 point sockets, with 12 point sockets you will likely round off those nuts. Lots of PB blaster is your friend. Put a little high temp anti-seize on those threads when you reassemble just for ease of removal again in the future.
Torque the three header-cat fasteners to 46 ft/lbs dry, 40 ft/lbs with anti-seize
Torque the two cat/test pipes to y-pipe fasteners to 40 ft/lbs dry, 36 ft/lbs with anti-seize

Had the engine replaced about a year ago and actually had purchased the multilayer metal gaskets from z1, but apparently the mechanic didn't install them. Now it has a terrible leak on the passenger side. I have a set of factory doughnutish gaskets i had got before finding the z1 option. Just wasn't sure if the factory ones would work with the berks. Wanted to be sure before taking it apart. This is on a 07 g35 sport sedan btw

Ok the 2007 sedan is actually equipped with the VQ35HR engine so technically this subthread is for the V35 chassis not the V36 chassis that your car uses. Regardless of the chassis code though it's all basically the same stuff I posted. The header to cat flange is a little different for the V36 chassis but it's still a 3 hole flange on top and a 2 hole flange on bottom.
That "donut" gasket you're talking about isn't installed on the cats, it's further downstream usually from the midpipe to muffler.
Here is a link to those gaskets used on the cats/test pipes so you can see what they look like. They are metal reusable gaskets, TECHNICALLY the FSM says they're not reusable but they are. The only time you actually replace them is if they break in half when taking them off but they're very robust and that's not usually an issue.

Ok so apparently they use the donut gasket on the VHR motor, I don't know if it's a supplementary gasket that ALSO uses the 3 bolt metal gasket or if that's the only gasket it uses (guessing it uses both) but that gasket isn't showing up on the parts list for your HR engine in a G35. It looks like it WAS used on the HR engine equipped in a 350Z though so that's probably why they sold it to you.
