I would not really say it's totally different other than they know how to use the buffer ...
I don't really think it's necessary to have your car polished by some shop other than if you feel lazy to do it...unless of course, you have some light scratches that can't be remove easily by just waxing...buffering would help but it doesn't guarantee that deep scratches would be removed.

When polishing comes off (I mean later later) Does swirl mark comes on? Cuz I often see some cars with swirl marks.
I'm keep asking you cuz shops they will always say i won't have swirl marks later.
I really don't know anything about car. and I'm wondering. hehe
I have silver G. you think polishing will help to make it look better?
Black ones. oh they look so nice but I don't know about silver ones.

Most paint in nowadays car comes with thin clear coat protectant

Whether a scratch can be removed or not depends on how deep is the scratch...if the scratch is too deep and already touched the paint, then all you can do is re-paint it.

Let say you have When you have small scratch on any layers of the clear coat, buffering would remove some if not all of the clear coat

Paint ++++++ Clear coat
When you wax it again, you would add that clear coat protectant again

Paint ++++++ Clear Coat ++++ Clear Coat
It also applies to bird poop thus why you really want to clean it ASAP when you see it because when the poop already penetrated your paint, be ready to spend at least $300 (+rental fee)
Disclosure: I might mistakenly explain some parts but it works something like that
