japanese style hot pot aka shabu shabu doesn't use any particular broth for cooking the meat. it's traditionally just water. i guess that's a difference between the japanese and chinese hot pot styles

Actually Japanese Shabu Water is flavored with Kombu. ( Dried Kelp) It's very simple and light.

really? i guess i just never noticed the flavor. have to keep my eyes open for it next time
