Need help choosing rims/tires

Looking into my next gift for my G and realized I can't go wrong with rims.

I'm planning to get rims when I'm getting my tires changed and I'm pretty interested in the 19" gunmetal Volk CE28N / LE28N.
However, I'm know nothing about choosing rims/ tires so I need some help here.
I know that the OEM setup is 8" front 8.5" rear but I have seen many people in the forum run a 9.5" Front 10.5" Rear setup.
Questions:
1)Does running the 9.5" Front 10.5" Rear sacrifice acceleration or handling, what about road noise?
2)Will it be hard to find replacement tires for this size?
3)Would 8.5" front 9.5" Rear be a better choice? or is the OEM size the optimum choice? I don't want trouble some setups (like having to roll fenders)
4)what tire sizes & offsets would you guys recommend for the suggested setups?
5) How does having lighter rims benefit the car?
6) Is there any reason why I might want 18" rims(better acceleration due to rotational mass or something)?
7) Something tells me that changing the tires/wheels might screw up the speedometer reading. How do I keep my speedometer readings accurate?

I have 9.5/10.5 Volks

1)It will sacrifice acceleration due to more rotational mass but you will have more traction TO accelerate if that makes any sense. I felt that I actually have a better launch when I need to from a complete stop. Handling is improved due the wider rims.
2)You will be able to find tires easily but most applications will be HIGH PERFORMANCE but they cost a bit more of course
3)You will not have to roll the fenders
4) 19" gunmetal Volk CE28N / LE28N - 19x9.5 +28mm & 19x10.5 +23mm = PERFECT in my opinion
5) Less rotational mass - for drag or track VOLK weighs 9 lbs more per wheel as opposed to superlight OEM Rays 19's
6) For performance reasons and less weight but any rim with a lip will look smaller since the spokes are pushed "in" as opposed to flushed.
7) Whenever you increase the diameter of your OEM wheels, the right way to do it is by offsetting that or balancing that with the choice of tires. I used 245/35/19 for the fronts and 275/35/19 for the rears... LOOKS good and still performs.

BTW, you have to be careful in the rain because wider tires have more surface area and are at more of a risk to hydroplane. No biggie since you want to be careful in the rain anyways.

I thought volks were supposed to be super light? Are you sure they're 9lbs heavier than the OEM19s?

Can anyone post pics of these setups from the rear bumper view? I can't find any.

19x 8.5 front 19 x 9.5 rear
19x 9.5 front 19 x 10.5 rear (This seems to be a bit too wide)

what would the perfect offsets be for 19" gunmetal Volk CE28N / LE28N - 19x8.5 & 19x9.5? (An offset that would clear brembos or any BBK I might put on in the future without having the rims sticking out)

Here's mine..Volk Sf challenge Mercury silver...9.5 front 28 offset
10.5 rear 23 offset...fits perfectly
