Without the climate control plugged in the AC goes full blast, all you need to do is pull a fuse. Pretty sure the clock display wouldn't do anything weird but show no clock and your AC control are gone anyways so no need to see the temp!

like rookie said if the controls are unplugged then the auto a/c will go to full blast but you can unplug the temp display to disable the whole cooling/heating system.
