most of the graph I saw were around 12.5 to 13 most of the time, not too bad actually for moderate NA engine.

Fuel Map Adjusted
Stock fuel was set to detune the top end horsepower. We discovered that the car runs extremely rich after 5000 rpm. Air to Fuel ratio (A/F) of 10.5 was found right before the stock rev limiter kicks in. Cleary, Nissan was trying to detune the power output at higher rpm to discourage the driver from hitting the rev limiter. For the performance enthusiasts, however, this is unsatisfactory, so we set the A/F to 12.5 all the way to redline to provide adequate power gain while still maintaining a safe margin.

The Nissan 350Z and Infiniti G35 run extremely lean under WOT (wide open throttle) from the factory. Through enhancing the ignition timing map, adjusting the fuel map, eliminating the speed limiter, and raising the REV-limiter to ~7100rpm our customers enjoy more power, economy, and reliability.

TS also raises the REV-limiter to 7400 or 7600 RPM (forgot which), which apparently AAM does 7100 RPM.
The day my friend got his TS reflash is the day I felt like he got a new car, it made such a huge difference, it just made all the other mods on the car... WORTH IT, before the tune, the car was slow as ****, if anything... it was a little slower than stock with I/H/TP/CB Exhaust/Plenum.

In stock form, my car ran a little lean from 2k-4k rpm, and rich from 5000-7000 rpm. At 6800 RPM, my car ran as rich as 11.7 AFR.
If you pay attention to both of what AAM & TS claim, they aren't really contradicting each other. TS seems to be correct about their statement. And AAM would be correct if they stated a stock VQ runs a little lean from 2-5k rpm; "extremely lean", especially after 5k, is a huge overstatement.
