Cooling Problems?

Ok, so last night my friend and I we're driving home after looking for some cars for him. I was on the freeway and I noticed a light lit up..So it caught my interest and I looked down, the "Service Engine Soon" Came up and I noticed that the temp of my car was super low. It was about 2-3 Lines above the actual C marking. So I started to freak out, I wondered if it was a bad sensor, so I accelerate and it got colder and colder....So I go WTF.....I Pull off the freeway and pull into a gas station, when I opened my hood I noticed that the reserve tank for my coolant was just under Minimum and I started to wonder. If I was low on coolant my car would over heat not be super f'ing cold...So I let it sit for 5-10 minutes. When I turned it on again, I pushed it...this time it caught my attention, the needle nearly spiked to the very top and when I stopped accelerating the needle went back to normal. Then when I accelerated again, the needle went back down below where it should be. Another thing I noticed is when the needle said my engine was super cold my intakes sounded deeper and my car felt a little more sensitive to the touch. So I'm taking my car in now to Infiniti and I'm going to see if it's a bad sensor or what. Just wondering if anybody else has had this problem. I have a 2007 G35S Sedan with 24.7k Miles....

Never had that problem but learning from others experiences if you have AF intakes i would go back to stock before going to dealer to avoid any issues.

that isnt going to cause a cooling issue though. i would top your coolant off if i were you and check for leaks, possibly a bad sensor as well
