0w-30 if I thought it would be OK for warranty purposes.

I highly doubt that if you needed to warranty something with the engine they would be checking the viscosity and/or brand of the oil you used.

I think they would look at viscosity and date and miles oil was changed if there was an engine problem under warranty. Dealer changes always specifies type of oil and viscosity used. If they saw anything other than what was recommended by Infiniti, they could elect not to cover under warranty.

If you are going to be sticking to the 7,500 mile changes, any name brand full syn in 5W30 should be good...there are only about 2-3 OEMs worldwide that truly manufacture synthetic motor oil...5W30 has a decent viscosity range (note that the 0W40 and 5W40 Euro oils are ultimately set up to handle the long stretches of high speed driving on the Autobahn et al). I use Castrol or Pennzoil Full Syn 5W30 along with the crappy Nissan OEM oil filters (a Purolator Pure One or Mobil 1 filter is probably a better choice). Also note that 5W30 is MUCH easier to obtain and usually in 5 quart sizes, which is almost a perfect refill for the Gen II G's (usually need an add'l shot of about 4 oz to hit the full line with a filter change)...

Going down a rating at the low end, ie. 0w-XX vs 5w-XX should be better for the engine since the oil is going to flow better when cold..
Now going up a rating on the upper end, ie. Xw-30 vs. Xw-40 on the other hand may raise an eyebrow at the dealer. According to many folks on the web, M1 0w-40 is a very good oil for the VQ. Per these folks, the M1 0w-40 is actually a very thin 40 weight oil, almost shearing to a 30 weight. However, for most folks who don't care to understand motor oil or distinguish motor oil from cooking oil or want to fight a dealer over potential engine problems with the dealer claiming it's the oil, then go with the 5w-30.
With the above said, if you bring in your car for the other service, ie. differential oil changes, trans fluid changes, coolant changes, brake fluid changes, etc and you have a good relation with the dealer, the dealer should not be difficult, if they want to keep a customer happy.

I should note I snagged a deal too and got 5 quart containers of valvoline synthetic 10w30 for 4 bucks a piece. I snatched up everything they had left in the store which was like 10 containers.

Around Western NY, you can get Kendall GT-1 Full Syn in 5W30 everyday for $2.99/qt...which is also a good deal - but I do like the convenience of the 5 quart size.

I use Castrol Syntec 0-30 (the german stuff). I can get it at autozone here in Fort Worth. A bit pricey compared to other oils at Wal-mart, though. All my other cars get oil from Wal-mart - great prices in 5 gal containers. Plain Mobil 1 for the (2) I30s and Motorcraft semi-synth 5-20 for the Expeditoin. I use Purolator Pure One oil filters (Pep Boys locally) on the G. I'll move to Pure One filters for the I30s once my NOS stash of Nissan filters runs out.
