There's a YouTube video on how to take three piece wheels apart and how to put back together IMO I wouldn't do it personally hire someone at a repudable wheel shop.

yes of course you can take them apart that's the point of a 3pc rim 
definitely take it some where reputable as they'll need to reseal it properly!

Yes it's okay, but why not have the shop rechroming the wheel perform that task?
