19x 8.5 Front 37 Offset
19x10.5 Rear 27 Offset
Tires on there are 245/35 Front
and 285/35 Rear
Is this setup okay. I was told that you should either go 245 front and 275 rear or go with 255 front and 285 rear. Help appriciated.
Also how are the offsets looking for a G35 coupe? Will I need any spacers to make it flush? I am not a fan of stretched tires and all that I like to have some grip first. Thanks for the help.

Those tires sizes are good IMO. You'll notice the VDC doesn't kick in as often with the 285 & 245 setup. This may or may not be be a good thing though since the rear will have more chances of slipping.
And with the 275/35/19, it'll have the closest staggered ratio as OEM when paired with the 245/35/19, but you will feel the VDC in hard accelerations and turns, similar to what you feel with OEM sizes.
As for your offsets, the +27 in the rear is not too bad, but the +37 in the front could use spacers. The front is almost the same offsets as OEM 19's, and you know how badly tucked they are. Actually the OEM 19's are +30 offsets, which makes your other wheels WAY more tucked.
