I drove the car for almost 2000 miles before lowering it, and the rear rubbed on anything but perfect roads. So I had the rear fenders rolled and pulled just enough to clear the tire in its full range of motion regardless of ride height. Now the car is slammed and tucking a tiny bit and no rub whatsoever.

I had 245/35 and 285/35r19 before also.
My old setup...drop on coils, camber kit, +26 offset all around, about -1.8 camber in the rear with plenty of room left. With natural camber, you'll have plenty more. I think I had flushness gap of about 15mm after the fender roll. Although without the roll, I was rubbing the 285/35 in the rear, right on the edge/sidewall of the tire. So yeah, basically rolling your rear gets you about 15mm of additional clearance. With the OP's setup with the fenders rolled, i think you'll have about 8ish mm of clearance left after the roll.
Also, i don't know about others but my VDC was less sensitive to slip with this sizes also. I don't know if that's a good thing since it allowed some slip/wheel spin before actually detecting it. Nevertheless I felt the car was more peppy with the VDC on rather than off.

I can't see how you'd get rubbing from a moderate lowering. The wheels are virtually the same diameter as stock and more negative camber will only further reduce the chance of rubbing on the outter fender.
