Will 255 & 285/35 work????.....
I have an 05 coupe lowered on 350z s.tech w/o a springmount mod.
I am looking at a set of 19x9.5 and 19x10.5 wheels w/ +12 offset.
Will I need to roll the rear fenders and/or do I need to go down to 245 & 275/35 tires
Any other suggestions are welcome.

you should be fine if you get your rears rolled and pulled, and the 255 on the front will clear fine. i have 255/35 and 285/35 on 9.5 and 10.5 +15 wheels and had to do the rolling/pulling.

Did you drive the car with the wheels on b4 you got the fenders rolled and pulled
I drove the car for almost 2000 miles before lowering it, and the rear rubbed on anything but perfect roads. So I had the rear fenders rolled and pulled just enough to clear the tire in its full range of motion regardless of ride height. Now the car is slammed and tucking a tiny bit and no rub whatsoever.
I was running 255/35s and 285/30s Definitely had to roll fronts and cut lip off rear on mine. Im now running 225/35s and 255/35s I rub hardcore on both setups, but Im dumped on BC coilovers

I had 245/35 and 285/35r19 before also.
My old setup...drop on coils, camber kit, +26 offset all around, about -1.8 camber in the rear with plenty of room left. With natural camber, you'll have plenty more. I think I had flushness gap of about 15mm after the fender roll. Although without the roll, I was rubbing the 285/35 in the rear, right on the edge/sidewall of the tire. So yeah, basically rolling your rear gets you about 15mm of additional clearance. With the OP's setup with the fenders rolled, i think you'll have about 8ish mm of clearance left after the roll.
Also, i don't know about others but my VDC was less sensitive to slip with this sizes also. I don't know if that's a good thing since it allowed some slip/wheel spin before actually detecting it. Nevertheless I felt the car was more peppy with the VDC on rather than off.

I have 255/35, 285/35 setup with stock 19s and never had an issue, but I'm not dropped but I'm also trying to figure it if it will work with G35 S-techs. Will it, or will I need to roll the fenders if I do drop on G35 S-techs?
I can't see how you'd get rubbing from a moderate lowering. The wheels are virtually the same diameter as stock and more negative camber will only further reduce the chance of rubbing on the outter fender.
