Need help choosing rims/tires

Need help choosing rims/tires

I'm planning to get rims when I'm getting my tires changed and I'm pretty interested in the 19" gunmetal Volk CE28N / LE28N.
However, I'm new to buying rims/ tires so I need some help here.
I know that the OEM setup is 8" front 8.5" rear but I have seen many people in the forum run a 9.5" Front 10.5" Rear setup.

Does running the 9.5" Front 10.5" Rear sacrifice acceleration or handling, what about road noise? Will it be hard to find replacement tires for this size?

Would 8.5" front 9.5" Rear be a better choice? or is the OEM size the optimum choice? I don't want trouble some setups (like having to roll fenders)

Also, what tire sizes & offsets would you guys recommend for the suggested setups?

I have 9.5"+28mm and 10.5"+23mm. I wanted a PHATTER lip on the rear for an agressive look.

Tires are 245/35 and 275/35

I do not rub and I did not roll my fenders, however my drop is only with Eibach Prokits = 1" drop.

How do I determine the offset? I've seen various setups and they all have different offsets.
Also, is it cheaper to get the rims & tires when my tires are worn out(maybe saving on labor or something)? how much would i save approximately.
