OK... the clarion center channel speaker is only 1/2 din unit size. If I was to get the double-din console, would that mean I would have a half din empty spot? Is there anything that can be done about that? Like a 1/2 din storage slot or cover?

Yes, you can get mounting kit faceplates that have a 3/4 DIN opening with a panel along the bottom covering the empty space. You can use that space for gauges or something. You could also fabricate your own cover. Get creative with painted or backlit plexi.
