It's very possible even with the sunroof. The mounting plates are only about 1/4" thick so there's no interference.
Before you go that route think about how much vision you will lose in your rearview mirror. It's not as bad in SUVs because of the headroom but in a sedan or coupe it pretty much blocks out your entire rearview. If you're doing this for your kid(s) you can mount it off to the side so you won't lose any view.
Depending on how much you're looking to spend you can get 2 flip downs for 2 kids and they won't have to agree what to watch. You could also go with 2headrest monitors.
