The rear is different from those pics.
Here's on my FX. Not exactly the same but should be close to what you'll see under there. The 2 gold collars are the things to adjust height. The top one locks the bottom one in place. Take out the top one entirely, have the spring sit on the bottom one, have it threaded all the way up when you put the suspension back together.

The collars on the HKS Hipermax RS coilovers for the G35 are 0.25" high. The ones on rookie's set up look thicker. I can't see how removing the lock collar would make it unsafe. The lock collar is just to keep the other collar from spinning upward.

I think that's a bad idea. The collar the spring is in contact with is a good fit. The threads will be a looser fit. I'm not sure if the spring could pop out since it's held in place with the suspension but it might make for some noisy suspension.
If it doesn't go low enough you're better off putting in different springs and using the HKS shock as a better shock vs stock.
