Tire Sizes
I know I could have used the search button, but there are too many posts to read through.
I current have 19 x 8.5 F and 19 x 9.5 R. Are there any advantages or disadvantages in running (245/35 and 275/35) opposed to (245/40 and 275/35).

You want to stay as close as possible to OEM diameter(s) as possible.
The VDC uses these sizes in the algorithm that detects slip.
That said you can vary slightly w/o compromising the system.
I always play with the size calculators to get the optimum size.

The only disadvantage in that setup, aside from the slightly smaller front diameter, is looks. Generally the rears are one profile size lower than the fronts.

245/40/19 in front would be an incorrect size to run with the 275/35/19 on the rear. The 245/40 would be the same height as the 275/35 tire in the back. Your tire shop recommended this because they do not understand the stagger designed into the "G" or "Z" and many other sports cars. Stay with the 245/35/19 and 275/35/19 combo with your 8.5 and 9.5" wheels. It's Correct.
