I just used the 303 Aerospace Protectant and I like it. Not glossy, doesn't leave a film, not oily, just a nice satin, clean finish. It also has UV protection, so to prevent fading.

Concur w/ 303 for the console (I have the Titanium coloured plastic). Read about it here, did some more reading- tried it- like it. No offgassing like w/ many others including armorall, so no film on the windshield from use on all plastics inside. They claim better UV protection than others, though I can't say as yet how valid that is.
For the soft easy to scratch shiny clear plastic used on displays (guages, radio, info display), I use computer/electronic compressed gas duster first, then wipe with an optical cloth (like the material used in the bags Oakley sunglasses come in). Mmmm, yes, I have been accused of being **** from time to time.
As for the windows inside, a trick I read about a long time ago, was to mix in equal parts, windex, vinegar, and water. Apply with a cloth, wipe off with an old t-shirt. With a small amount of elbow grease, you'll be surprised how streak and residue free you can get the windows. Of course, around the defroster/antenna element, water damp cloth only, gentle.
