I think you are screwed because you let someone else try and fix a problem created by the dealership. Once you let the other detailer touch your car, the dealer is off the hook.

Obviously the detailer had no clue to what he was doing. You should have done your homework better and asked to see other cars that had the same process done.

Sorry, I know that is not what you wanted to hear but it is the reality of the situation.

I am on the same boat you are. I also just bought a brand new black on black G35x and wow, the scratches and water spots are so annoying.
