The same gas/brake procedure is listed in the G35 FSM as a way to test the stall speed of the torque converter. The FSM specifically says not to brake stall for any longer than 4 or 5 seconds or you can overheat the tranny fluid.
I would not recommend brake stalling on a regular basis just because it is more abusive in general. It's only needed in those situations when you're racing from a dead stop.
