Overheating mystery, need some help

Help

Hey guys I just replaced my thermostat and it was weird because, im guessing the previous owner did some weird **** where he bypassed the car from overheating. The thermostat housing was where it had to be. But the actual thermostat piece wasn’t there. So I replaced it, (non OEM it was a thermostat from o reilys) bled the system did all the steps from bleeding it from the valve. And revving it to 3k for 10 secs, let it cool down and repeat until there was coolant in the bleeder valve. The car was working perfect, no overheating nothing until I went on the freeway and was going fast and did a pull. It started climbing up. I have no idea why it’s doing this. Also forget to say that I never had overheating problems I just switched the thermostat cause I had a cel.

Turn the heater to high and make sure it's blowing hot air, if not then you definitely didn't get the air burped out of the system.
