I recently switched to GC 0w30 and I added 1 quart in 5k miles. Before using M1 5w30 I never had to add a drop.
Is this normal for 0w30? Or should I switch back to 5w30?

You're noticing a difference because the zero-30 in a thinner oil. It's not normal, but can occur with higher mileage engines due to worn rings, etc.

I've always used a little bit less than 5 quarts. I know it says 5, but it always seems a bit too full if I add in all 5. Never had an issues so it's okay I suppose lol.

^ I always figured this was due to sludge buildup taking up space in the oil pan..
