low profile jack man and if not go for some plywood from home depot just to get car up a little bit to really jack it then yes jack stand are a must always be safe

How have you been doing your oil changes?

Trans service does not need to have car level unless manual. Just drain and lower, refill from top, right? Same for coolant.

Diff, that's the tricky one. My car wasn't level when I refilled, but after it was on the ground I opened up the fill bolt and a bit of excess came out. Since you are lowered you may need four jacks or lift.
