Going from Brembos to base brakes

For the most part yes, although if you have an 03-04, I would suggest changing to the 05-07 brakes rather than base model 03-04 brakes. Larger diameter brakes.
I've never seen anyone go backwards, but it's a pretty simple swap for 03-07 guys adding the brembos.
Out back, you'd need to trim the dust shield a tad for the larger rotor, and get the calipers spec'd for the 05-07 with the larger pad support bracket for the larger diameter rotor.
Up front, just slide on the rotor and bolt up the caliper.
I do not know about the brake lines or banjo bolts though.
There are a few DIY's floating around from base brakes to Brembos and 03-04 brakes to 05-07 brakes. Might want to take a peek at those to get a better idea.
Master cylinder is a different bore diameter, but I have yet to see someone swap that our, or complain about the pedal feel. If the brakes feel hard/soft after the swap, might want to explore changing this to the proper diameter MC

So you have a car with no brakes?... or are they still on there but you have agreed to sell them to someone.
I am still stuck on the notion of why you would ever remove them and go to the non-Brembos. The Brembos are so far superior to non-Brembos on the 2003 and 2004 Coupes.

Just go to the dealer and ask them to look up the bolt P/N. I'm sure they are $10 each but they might list specs. Or you could search the P/N and see if the specs are listed.
Other than that, unless someone has a set handy and has the means to measure thread pitch and dia, it's a hard question to answer.
And, I would have to agree that vehicle value has been diminished now. The 6MT market is so niche that people looking for that particular car will see the brakes have been removed and either move on to another car, or want a discount.
